Taiwanese Pork Over Rice (Ruru)

Ingredients

5.93 lb Firm Tofu
0.28 cup Chinese cooking wine (Hua Tiao)
0.56 cup Chinese Five Spice
13.3 lb Ground pork
4.44 unit onions
0.37 cup soy sauce
2.96 tbsp White Pepper
22.2 clove garlic

Directions

Make bozo version for KT: set aside some ingredients in a separate pan and using gluten free soy sauce. similar steps otherwise

Dice onions and mince garlic and stir fry in a pot. Once the onions are nicely browned (doesn't need to be caramelized, just colored and soft), add the ground pork. Add soy sauce and Chinese cooking wine once the meat is only slightly pink. Add salt, white pepper, and Chinese five spice to taste once the meat is nearly fully cooked.

Make vegetarian version with tofu! Press tofu for 30min! Crumble tofu and season with soy sauce, white pepper, light salt, and Chinese five spice. Cook similarly like meat version! Dice onions and mince garlic and stir fry in a pot. add cooking wine and more seasoning if needed.

Let the pork stew for at least 15 minutes (can be left on low for a long time, making sure the bottom doesn't burn).

Garlic Bok Choy (elainez)

Ingredients

11 lb Baby bok choy
60 clove garlic
0 tsp salt
1.25 cup oil

!. Wash all the bok choy and cut of the bottoms of the stem
2. Mince all the garlic
3. Heat up oil on a pan on high heat. Add garlic and stir-fry until aromatic.\
4 .Add the bok choy and quickly stir-fry for a few times before adding the salt (to taste). Quickly stir-fry a few times agin, turn off the heat, dish out and serve immediately.

Ingredients

13.8 cup rice, normie
13.8 cup water

Directions

*Note: The big rice cooker can't take much more than 7-8 cups of rice*
A good amount of rice to water ratio for the big rice cooker is about 7.5 cups of rice to 8.5 cups of water (check the water level against the side of the rice cooker)

For non saucy recipes, 9-10 cups of rice should be fine.

1. Measure out required cups of asian short-grain rice.
2. Wash 2-3 times. (Or until water runs a little bit clearer.)
3. Cook the rice in the rice cooker(s).

Needs a lot of rice ), make at least 9-10 cups (for 30+ people). Use the 2 rice cookers and even the mini one if needed.
