Gyeranjjim/Zheng shui dan (steamed egg)

Ingredients

1.5 cup chicken broth - low sodium
1.5 unit Egg Yolks
3.5 unit eggs
1 tsp Fish sauce
1 tsp Fish sauce
2 tbsp Green Onion
0.67 tbsp sesame oil
0.5 tsp soy sauce
0.5 cup vegetable broth

PREP: Chop the green onions. Crack the eggs into a bowl.

Add chicken or vegetable broth to a pot within a larger pot that has water. Boil the water over medium high heat. The idea is to steam the eggs.
Add egg yolks to a large bowl with cracked eggs
Add fish sauce (soy sauce for vegetarians) and chopped green onion to the eggs. Beat well.
When the chicken broth starts boiling, lower the heat to a simmer.
Add the egg mixture to the simmering broth and stir it well with a fork for 30 seconds.
Close the lid to the larger pot and simmer until the egg mixture sizzles and has a texture like soft tofu.
Open the lid and turn off the heat. Drizzle sesame oil and sprinkle chopped green onion over top.
Serve hot as a side dish with rice.
