Honey-Mustard Salmon (Jack)

Serves 4

Ingredients

1 tbsp brown sugar
1 tbsp butter
2 tbsp dijon mustard
1 tbsp honey
1.25 lb salmon
1 tbsp soy sauce

Directions

1. Heat the oven to 400 F. Combine the butter and brown sugar in a bowl and microwave until the butter and sugar have melted together, about 30 secs. Stir in the mustard, honey, and soy sauce.

2. Toss the asparagus or broccoli with 1 tbsp of the oil in a Pam sprayed baking dish and sprinkle with salt and pepper. Sprinkle the parmesan on top of the asparagus or broccoli. Place the baking dish in the oven and roast until they're al dente, 10 to 12 mins.

3. Meanwhile, heat the remaining tablespoon of oil in a skillet over medium high heat. Season the fillets with salt and pepper and add them to the pan, flesh side down. Brush the top of the fillets with the honey mustard mixture. Cook them until browned on one side 3 - 4 mins. Set aside until all the fillets are cooked on one side. Then flip all the fillets on an edged cooking sheet, brush the honey mustard mixture on the cooked top side of the fillets. Place the cooking sheet in the oven and bake until the salmon is firm and flakes easily (but before white solids begin to form on the surface) about 5 minutes. Remove the fillets from the oven and brush them with any left over honey mustard mixture and serve with the asparagus or broccoli.
