Lemony orzo veggie salad-chicken (monsy)

Serves 4

Ingredients

0.5 cup bell peppers
0.13 tsp black pepper
0.5 lb chicken breasts
0.5 cup cucumbers
1 tbsp Dill
0.5 tsp garlic
2 oz goat cheese
0.25 tsp honey
3 tbsp lemon juice
0.25 tsp Lemon rind
1 tbsp olive oil
0.75 cup Orzo
0.5 tsp salt

Directions

1. Cook orzo according to package directions, omitting salt and fat. Bake chicken in oven. Drain and rinse orzo with cold water; drain and place in a large bowl. When chicken is cooked, shred chicken or cut into 1 inch pieces.

2. While orzo cooks, combine lemon rind, lemon juice, olive oil, salt, garlic, honey, and black pepper (through black pepper), stirring well with a whisk. Drizzle juice mixture over orzo; toss to coat. Add chicken and cucumber, red bell peppers, green onions, and dill; toss gently to combine. Sprinkle with cheese.
