Palaak Paneer

Serves 8

Ingredients

1 unit tomatoes
0.63 lb frozen spinach
1 tsp garam masala
2 unit garlic
1 unit ginger, fresh
1 unit onions
1 cup ricotta cheese - lowfat
0.5 tsp turmeric, ground

Directions

1. Thaw the chopped spinach in the microwave.

2. Pour oil in a pan, add cumin. Once it browns, add turmeric, cumin +
coriander powder or garam masala, minced chillies, ginger and garlic.

3. Add the onions next and saute till tender. Add the tomatoes (if you are
using them) next and saute till tender.

4. Add the thawed spinach, add salt, mix, cover and cook on low heat till
it is lost most of the moisture: it should not be dry but not runny either.

5. If you are using Paneer, saute in a nonstick pan which has been coated
with butter. If you are using ricotta cheese, lightly saute it.

6. Add the above to cooked spinach mixture.

7. If you are adding cream, add it to the above and mix well.
