Panko Crusted Salmon

Serves 2

Ingredients

2 tbsp Cornstarch
0.3 cup dijon mustard
0.67 tbsp lemon zest
2 tbsp olive oil
0.5 cup Panko
2 tbsp parsley
0.38 lb salmon
0.25 oz tofu

Directions

Preheat oven to 425 degrees

In small bowl, combine crumbs, chopped parsley, olive oil, lemon zest, salt and pepper.

Line baking pan with foil for easy clean up.

Place salmon on foil.

Brush Dijon on salmon fillets - be liberal, the crumbs will stick to this.

Top with heaping tablespoons of crumb mixture and press down slightly so they stick to the salmon. (Salt and pepper are not included in ingredients list, but add to taste if wanted.)

Bake for 12-15 minutes depending on thickness of salmon (when you press on the salmon it should feel firm - careful not to overcook!)

Serve with sliced lemon if desired.

For tofu: Pan fry in dipped in cornstarch.
