Make pasta according to directions on the package.
Meanwhile, heat oil in a large casserole pot over medium high heat.
Add onion and garlic and saute until soft and translucent, about 2 minutes.
Add carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes.
Add tomatoes and tomato paste and simmer covered on low heat for about 1/2 hour or until hot.
Optional: You can add rosemary or basil as additional seasoning.
This can also be made with ground beef:
-Add the beef with the onions. Only add tomato once beef is browned.
