pepper shrimp

Ingredients

6 unit bell peppers
2 unit broccoli
0.5 cup butter
1 unit green onions
5 cup lowfat milk
3 unit onions
6 lb potatoes
8 lb shrimp

Directions

Boil pot of water with potatoes whole, or at most, cut in half. When cooked, remove potatoes, and mash with about 2-3 cups milk, 1/2 lb butter and 2 tsp salt until fluffy. Keep warm.

Season cleaned shrimp with 2 tsp salt, 1 tsp paprika, 1 tsp black pepper, 2 tbsp garlic powder, 1 tsp ginger powder and half package green onions, chopped finely. Let sit for a 15 minutes while you do the following.

Chop 2 large onions and 6 bell peppers into bite sized pieces. Heat 3-4 tbsp olive oil on medium in heavy pot. After about a minute, add onions. Cook, stirring occasionally for about 2 minutes. Add bell peppers and cook for another 2 -3 minutes. Add shrimp and 1 cup soy sauce, 1/2 cup ketchup and remaining green onions. Cook until shrimp is done. This does not take more than 10 minutes or so once heat is distributed evenly. The shrimp will turn very slightly pink. Taste for salt, and add as necessary. Remove from heat.

Steam broccoli, covered, in colander above a pot of boiling water. It would be pretty smart to use the water you boiled the potatoes in. Sprinkle with 1 tsp salt and 1 tsp black pepper evenly. Layer in between broccoli pieces with 1 large, thinly sliced onion. Steam until broccoli is tender and onion is limp.
