Raita (yoghurt)

Serves 6

Ingredients

0.5 unit carrots
0.25 cup cilantro
1 taste cinnamon
1 tbsp coriander, ground
0.5 unit cucumbers
0.5 tsp cumin seeds
2 cup GREEK YOGURT
2 tbsp lime juice
1 taste nutmeg
0.5 unit onions
1 cup red onion

Cucumbers are watery and thus must be drained. Place cucumber in a colander, and sprinkle with salt. Toss well; drain for 30 minutes. Rinse with cold water; drain. Place cucumber on several layers of paper towels; cover with additional paper towels. Let stand 5 minutes, pressing down occasionally. Combine the cucumber, yogurt, and remaining ingredients.
