Red Cabbage (rotkohl)

Serves 8

Ingredients

1 cup Apple Juice
1 unit apples
1 cup brown sugar
1 unit cabbage, head of
0.5 tsp clove
0.25 tsp nutmeg
1 unit onions
1 cup red wine vinegar

Directions

1. Shread cabbage

2. chop onions and apples

3. In a deep frying pan, heat olive oil.

Add onions and cook till slightly tender (about 3 min)

Add cabbage and apples and saute for 2-3 minutes.

Add all liquid ingredients and spices.

Bring to a gentle simmer, cover and allow to cook for 30-45 minutes. Salt & Pepper, to taste.

Cabbage should be cooked, but not mushy.
