Spaetzle

Serves 7

Ingredients

1 unit eggs
1.5 cup flour
1.5 unit onions
1 tsp salt
1 cup swiss cheese, low-fat
0.5 cup water

Directions

Boil a pot of water. In a bowl, beat eggs. Add salt, water, and flour to the bowl and mix until smooth. Put the spatzle maker (ask Katherine) horizontally onto the top of the pot. Using about 1/4 of the batter, push the mix through the spaetzle maker into the boiling water. After the spatzle rise to the top of the pot, cook the spaetzle for one more minute. Spoon them off of the top into a bowl. Repeat 3 times with the rest of the batter. Cut onions and saute, grate cheese (if not already grated). Mix the sauted onions and spatzle, top generously with cheese.
