Spicy Bean Burgers (Bea)

Serves 4

Ingredients

2.08 oz carrots
0.5 can chick peas
0.5 tsp chili powder
1 tsp coriander, ground
0.13 can Corn (whole kernel)
1 tsp cumin, ground
1.5 tsp flour
1 clove garlic
1 unit onions
0.5 tsp paprika
0.5 can red kidney beans

Directions

1) Boil the carrots until soft enough to poke with a fork; drain.

2) Meanwhile, stir-fry the onion and garlic in olive oil for 5 mins until soft and starting to brown.

3) Add the herbs, spices and flour, and cook for 1 minute, stirring well (don't let the flour burn).

4) Mash the beans and chick peas with a fork. Mix in the onion/garlic mixture, the boiled carrots and sweetcorn and mash some more. Season to taste.

5) Shape the mixture into burger-size patties and fry for 5 to 6 mins on each side til done. Do not let them burn!
