Taiwanese Pork Over Rice (Ruru)

Ingredients

4 lb Firm Tofu
3 tbsp Chinese cooking wine (Hua Tiao)
0.38 cup Chinese Five Spice
9 lb Ground pork
3 unit onions
0.25 cup soy sauce
2 tbsp White Pepper
15 clove garlic

Directions

Make bozo version for KT: set aside some ingredients in a separate pan and using gluten free soy sauce. similar steps otherwise

Dice onions and mince garlic and stir fry in a pot. Once the onions are nicely browned (doesn't need to be caramelized, just colored and soft), add the ground pork. Add soy sauce and Chinese cooking wine once the meat is only slightly pink. Add salt, white pepper, and Chinese five spice to taste once the meat is nearly fully cooked.

Make vegetarian version with tofu! Press tofu for 30min! Crumble tofu and season with soy sauce, white pepper, light salt, and Chinese five spice. Cook similarly like meat version! Dice onions and mince garlic and stir fry in a pot. add cooking wine and more seasoning if needed.

Let the pork stew for at least 15 minutes (can be left on low for a long time, making sure the bottom doesn't burn).
