Garlic Knots (Vegan)

Serves 30

Ingredients

3.5 cup All Purpose Flour
2 tbsp salt
1 tsp sugar
0.25 cup extra virgin olive oil
1.33 cup warm water
1 tbsp yeast
2 tbsp garlic
0.25 cup parsley

Directions

Makes 30-40 knots depending on size.
----The Dough--++++************Should be made at the beginning of the cooking time to allow for rise!******++++
1) Add the yeast to warm water and set it aside for about 3 minutes.

2) In the bowl of a standing mixer, fitted with a dough attachment, mix together the flour, salt, sugar and olive oil. Stir the yeast in the water to make sure its all dissolved and add it to the flour mixture.

3) With the speed on medium, mix until everything is combined. Reduce the speed to low and mix for 10 minutes.

4) Oil 2 bowls with olive oil and set aside. Divide the dough in two pieces and roll into a ball. Place each ball of dough into the oiled bowls, seam side down and brush the tops of the dough with a little oil to stop them from drying out. Place a piece of plastic wrap on top of each bowl and place the dough into a warm place. Inside a microwave or an oven (oven turned off) works best.
5) Let rest for 2ish hours for best effect.

Assembling the Garlic Knots

1) Preheat the oven to 400 degrees, line a baking sheet with parchment paper.

2) Place the ball of dough on a floured surface and cut it ½ inch strips. Form the knots from each strips and place them on the parchment lined baking sheet.

3) Bake for 15 to 20 minutes or until lightly golden brown, meanwhile make the oil.

4) In a small food processor, add the garlic, oil and parsley, blend until smooth.

5) IMMEDIATELY out of the oven add the knots to a large bowl and pour over the garlic oil, season with a little salt and pepper and toss together until they are well coated in the garlic oil.
