Ruru's (edited by tamtam) Roasted Veggies

Ingredients

1 lb Butternut Squash
2 head broccoli
2 lb Sweet Potato
2 unit Red Onion

Directions

Preheat the oven to 450°F.

1) Cut the vegetables into bite-sized cubes.
2) Make the olive oil rub! Add salt, pepper, thyme, rosemary, oregano, and nutmeg into olive oil and mix until even (or as even as you can make it).
3) Line trays with aluminum foil and cover the veggies in the rub.
4) Bake for 30-40 minutes or until the veggies are ready (after 20 minutes, check every 5-10 minutes).
