Cacio e pepe brussels sprouts

Serves 6

Ingredients

2 tbsp olive oil
1.5 tsp ground pepper
0.25 tsp red pepper flakes
1.31 lb brussels sprouts
1 tsp salt
0.67 tbsp lemon juice
1 cup Parmesan cheese

Directions

Either buy brussels sprouts pre shredded or roughly chop them before beginning.

In a large skillet over medium heat, cook the olive oil, pepper, and red pepper flakes together until toasted, 30 seconds to 1 minute.

Add the Brussels sprouts and cook, without stirring, until they begin to soften, about 2 minutes.

Season with the salt, and cook until the Brussels sprouts just begin to char, about 2 minutes.

Remove the skillet from the heat and add the lemon juice.

Serve warm, with fresh Parmesan on the side.
