potato soup (tamara)

Serves 16

Ingredients

7 lb russet potatoes
0.5 lb bacon
1 unit onion
0.5 stick butter
5 unit vegetable bouillon cubes

Directions

Make veg without bacon

Melt butter in frying pan.
Chop onion into small pieces. Chop bacon into small pieces.
Peel and cut potatoes into small chunks.
Boil potatoes until soft, approx. 20 min.
Brown the onion in the butter. Separately, fry the bacon pieces.
Add bouillon cubes to the butter/onion mixture and crush with a fork. Set aside.

Drain potatoes into a large pot, reserving some of the water.
Mash potatoes, adding water as needed to reach the desired consistency.

At this point, separate the potato mixture into separate pots for vegetarians and lactose intolerant folks.
Add the onion mixture to the non-lactose intolerant pots. Add the bacon and bacon grease to the non-vegetarian pots. Add some oil/ghee and bouillon to the lactose-intolerant version.
Stir in until well blended.
Simmer for an hour.
