jamaican steamed cabbage

Ingredients

2 unit large head of cabbage, sliced
4 unit onion, sliced
4 unit carrot, julienned
4 unit red pepper, sliced
4 unit yellow pepper, sliced
12 clove garlic
12 sprigs fresh thyme
1 tsp paprika
1 tsp garlic powder
1 tsp parsley
0.5 tsp black pepper
0.5 tsp onion powder
1 tsp dried thyme
1 tsp chili powder
1 tsp sugar
0.5 tsp salt
0.25 cup butter or oil
1.33 tbsp black pepper
1 cup water
1 taste salt
0.5 cup coconut oil (or sub veg oil)

Melt the coconut oil (or veg oil) on medium heat then proceed to sautee the onion, garlic along with the sprigs of thyme until soft and tender.

Add the cabbage, carrot, and bell peppers; fold and stir. The pan may seem overcrowded but the cabbage will reduce as it heats through.

Continue to stir and fold until the cabbage reduces in volume, this should take up to 5 minutes.

Once reduced, lower the heat and add the water, ready for steaming.

Cover the skillet with a lid and steam for 15 minutes (10 minutes or less if you want crunchy cabbage).

Remove the lid and season with the remaining seasonings + butter and salt to taste and stir.

Serve accordingly and sprinkle the cabbage with additional loose thyme (optional).
