Serves 15

Ingredients

1 lb Kataifi (or shredded filo dough)
2.5 lb Sweet Cheese or shredded mozzarella
2 cup Granulated Sugar
1 pinch red and yellow food coloring
1.12 cup Unsalted butter
0.5 cup Pistachios (optional)- can substitute with other nuts
1 lb Ricotta Cheese
1 tbsp lemon juice
2 cup Water
1 tbsp Rose water

Directions

* Start this ASAP.
* Heat oven to 350
*Sweet cheese like Karoun Whole Milk Sweet Cheese
* Sweet cheese can be substituted by shredded whole fat mozzarella
* If the filo dough is frozen make sure to thaw on the counter
This recipe is all about intuition :D so taste as you go

1. Roughly chop the filo dough into 1/4 inch long pieces.
2. Mix 1/9 of the total melter. butter with a drop of red and yellow food coloring until a tasty red color is achieved.
3. Pour the melted butter equally into large cookie trays and spread (tray with low sides because you will have to flip it later).
4. Add the rest of the melted butter into the shredded filo dough and mix until all the pieces are coated.
5. Place half of the butter filo dough onto the bottom of the tray and press down firmly until compact. It might be useful to use a measuring cup or flat-bottom cup to press down. Make sure no holes.
6. Generously spread the ricotta and sweet/mozzarella cheese
7. Cover with the rest of the buttered filo dough and gently press down with a spatula
8. Cook in a preheated 350-degree oven for 40-50 minutes or until the top is golden and the butter is bubbling.
9. Remove from the oven, cool, and flip onto another tray to reveal the red filo underneath.
10. Combine equal parts sugar and water on high heat to make a simple syrup
11. Take the syrup off the heat and add rosewater and lemon juice.
12. Once the knafeh is cooled enough to hold shape, gently pour half of the simple syrup on top. Taste, and adjust sweetness to taste.
13. Optional. Sprinkle with crushed pistachios
14. Cut into squares and serve warm with leftover simple syrup, if any, and pistachio.
