Serves 4

Ingredients

3 tbsp butter
3 tbsp flour
1 cup chicken broth
0.75 tsp fresh thyme, chopped
0.5 tsp black pepper
0.25 tsp salt
1.5 tbsp nonfat plain Greek yogurt or sour cream
0.25 cup vegetable broth
0.5 tsp poultry seasoning

Notes:
This is scaled for a 4:1 ratio of meat eaters to vegetarians. Use 4/5 of the ingredients in the pan with the chicken broth, and use the rest in the pan with the veg broth.

Turn heat to medium low and add the butter to a skillet. (You may want to add some oil as well to compensate for the fact that there are no chicken drippings in the pan already.)

Once melted, add the flour and whisk to combine. Cook the flour mixture for 1 minute, whisking occasionally, to get the raw flour taste out.

Slowly add the chicken broth to the pan and whisk continuously to combine, until the mixture is smooth and without any lumps.

Sprinkle in the thyme, poultry seasoning, salt and pepper.

Let the gravy cook over medium-low heat for 2-3 minutes, until slightly thickened.

Remove the skillet from the heat and stir in the Greek yogurt.
