Vegetarian Caesar Salad

Serves 4

Ingredients

2 tbsp mayonnaise
2 tbps sour cream
2 tbsp extra virgin olive oil
2 tbsp Parmesan cheese finely grated, or parmigiana reggiano
1 clove garlic minced
1 tbsp lemon juice
0.67 tbsp dijon mustard
1 tsp red wine vingear
0.25 tsp salt
0.25 tsp pepper
2 tbsp water (required to adjust the consistency)
1 head romaine lettuce
0.5 cup Parmesan cheese shaved or grated

Directions

Make Vegetarian Caesar Salad Dressing
In a bowl, add all the ingredients mentioned for caesar dressing which is all except for lettuce, other amount of parmesan cheese, and croutons.
Whisk until well combined. creamy caesar salad dressing is ready! Keep aside and store refrigerated until ready to use.

Prepare the Lettuce
First, cut the top wilted part of the lettuce. Discard it. Throw away the outermost layer of lettuce if it looks spoiled or spotted.
Now make 4-5 slits lengthwise all around the lettuce. Chop the lettuce into bite-sized pieces starting from the leafy end and moving towards the core end. Discard the core end.
Now dry the lettuce thoroughly using salad spinner. Alternately you can also spread the washed drained lettuce leaves on a paper towel and /or blot or pat dry with a paper towel.
Add the clean, dry, chopped lettuce to a large serving bowl along with grated or shredded parmesan cheese and crunchy croutons.
Drizzle in the veg caesar dressing. Toss gently until lettuce is evenly coated.

Store bought or homemade croutons if no garlic bread
4 heaping cups cubed bread
1/3 cup extra virgin olive oil
1/4 teaspoon garlic powder
1/4 teaspoon sea salt

Preheat the oven to 375°F.
In a large bowl, combine the bread, garlic powder, and salt. Drizzle olive oil over bread while stirring. Stir well until bread is coated by all ingredients and olive oil is absorbed.
Spread the bread cubes into an even layer on a sheet pan. Don’t crowd the pan. Bake for 10 minutes, or until golden brown and crisp. If you're using super fresh bread, they'll take a little longer to become golden brown. If the bread is stale and dry, it may brown faster, so keep an eye on it!
