Homemade Refried Beans

Serves 4

Ingredients

1.25 cup cooked canned pinto beans
0.5 cup onion
1 unit garlic
2 tbsp Olive Oil
1 taste pepper
1 taste salt

Directions

1. Chop the onion very small dice. Finely chop the garlic.

2. In a medium-sized pan, heat the oil to medium and add the chopped onion. Cook until the onion becomes transparent.

3. Add the chopped garlic and cook for 1 minute. Do not allow the garlic to brown which will give it a bitter taste.

4. Add the cooked beans with a little bit of the cooking water plus the salt and pepper.

5. Cook for 2 minutes before mashing. Mash the beans to the consistency you prefer.

6. Cook for 5 minutes stirring continually.

Turn off the heat and allow the beans to rest for 3 minutes before serving.
