Japanese Corn Soup (kxzheng)

Ingredients

3 cup (frozen) corn kernels
0.5 unit white onion
0.5 cup milk
0.5 cup heavy cream
2 cup water
0 taste salt (to taste)
0 taste black pepper (to taste)

1. Heat a little olive oil in a large pot and fry the onion on a medium setting until softened – about 5 minutes.

2. Add the corn and season to taste. Cook for another 5 minutes, stirring frequently.

3. Add the water, stir everything together and bring to the boil. Then reduce to a simmer and leave to cook for 15 minutes.

4. Leave the mixture to cool for about 5 minutes before transferring to a jug blender. Blend until smooth.

6. Return the mixture to the pot and add the milk and cream. Stir everything together over a medium heat until warmed through.
