greek salad minus olives (christmas)

Serves 4

Ingredients

0.25 cup Extra virgin olive oil
3 tbsp Red wine vinegar
1 clove Garlic clove
0.5 tsp Dried oregano
0.25 tsp Dijon mustard
0.25 tsp Sea salt
1 taste Black pepper
1 unit English cucumber
1 unit Green bell pepper
2 cup Halved cherry tomatoes
0.31 lb Feta cheese
0.33 cup Red onion
0.33 cup Fresh mint leaves

Directions

Mince the garlic. Cut lengthwise, seed and slice cucumber. Chop bell pepper. Half tomatoes. Cube feta cheese. Slice red onion.

Make the dressing: In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper.

On a large platter, arrange the cucumber, green pepper, cherry tomatoes, feta cheese, and red onions. Drizzle with the dressing and very gently toss. Sprinkle with a few generous pinches of oregano and top with the mint leaves. Season to taste and serve.
