Pulled Chicken Sandwiches

Serves 4

Ingredients

2 lb boneless chicken thighs
0.5 cup bbq sauce
0.25 tsp chili powder
4 unit hamburger buns (brioche preferred)
1.5 unit tomato
2 cup shredded lettuce
0.67 tbsp salt
1 tsp pepper
0.25 tsp smoked paprika
0.5 tsp garlic powder

1. Preheat the oven to high (450) and make sure there is an oven rack right below it.
2. Remove fatty bits of chicken and slice thighs into half/quarters so they cook faster
3. Season the chicken thighs all over with salt and pepper and place them on a baking sheet.
4. Place the sheet of chicken directly into oven. Broil for 6 minutes. Flip the chicken and broil for 6 minutes more.
5. After 6 minutes, brush a layer of BBQ sauce onto the chicken. Broil for 1 minute. Flip and brush the other side, then broil for 1 minute more.
You can repeat this one or two more times until the chicken is cooked through. It should be 165 degrees F internally.

6. Place the chicken in the bowl of your electric mixer. You can also just shred this by hand or with forks, etc - but wait until it cools somewhat. It doesn’t need to cool before going into the mixer.

7. Turn the mixer on medium-low speed. As the chicken is shredding, add in the paprika, garlic powder and chili powder. Continue to mix until the spices are evenly distributed.
8. Add in ½ cup BBQ sauce and continue to mix. You can add more sauce than this if you’d like at this point!
9. Slice tomatos and lettuce to put on top of sammies.

Take the chicken and pile it on a brioche bun. Top with toppings! Enjoy!
