Beef and Black Bean Sliders (Jack)

Serves 5

Ingredients

0.2 bag(s) Green Onion
1.25 lb ground beef
5 rolls(s) Hamburger Buns
2 tbsp olive oil
0.2 unit oranges
0.5 cup Black beans - low sodium
1 tsp dijon mustard
1 tbsp dijon mustard
1 tsp garlic powder
1 tbsp orange juice
3.2 tbsp parsley
0.25 head red cabbage
1 tbsp sugar
1 tbsp vegetable oil

Directions

Preheat the grill (or frying pan). In a medium bowl, mash the black beans, half of the olive oil (1 tbsp/5 servings so assume total of 4-5 tablespoons for a normal DH meal), and garlic powder with a potato masher or fork until very creamy. Gently mix the black bean mixture with the ground beef. Season the mixture liberally with salt and pepper. Divide the mixture into equally portioned thin patties. Using a pastry brush (or fork?), lightly coat the outside of the patties with mustard. Lightly brush the grill/frying pan with the oil and place the burgers on the hot grill/pan. Cook the burgers until a golden crust is formed. Topped with crunchy Grilled Crunchy Coleslaw (below):

Grilled Crunchy Coleslaw:
Preheat a frying pan. Halve the cabbage heads, then cut each half into 4 wedges, leaving core intact so wedges hold together. Place the cabbage wedges on the frying pan, and drizzle with vegetable oil on both sides. Sprinkle with sugar, salt, and pepper until *lightly* coated. Pan-sear (or grill) the cabbage for 4 minutes each side, or 8 minutes total, turning once or until the edges begin to wilt, but the bulk of the cabbage remains crunchy. Remove the cabbage from the pan and allow to cool a few minutes. Meanwhile, make the vinaigrette in a medium bowl. Prepare the orange zest by grating the orange peel from your orange. You need 1 tsp of zest for each serving of four so assume 2 tbsp if you're cooking for 20-24. Whisk the orange zest, Dijon mustard, and orange juice with the remaining olive oil until it emulsifies. Add salt, and pepper, to taste. Chop the grilled cabbage, removing the core, and place in the bowl with the dressing. Add the parsley and green onion and toss to coat.
