Broccoli Stuffed Potato

Ingredients

1 cup broccoli
4 unit Green Onion
1.5 lb ham
0.5 cup nonfat milk
8 unit potatoes
2 oz Shredded Cheddar - lowfat
1 cup sour cream - nonfat

Directions

Preparation START EARLY!!!
Preheat oven to 425deg.
Wash potatoes. do not peel them! Poke a couple holes in skin of potatoes with a fork (not too much because we want skin to stay intact). Lightly coat each potato with olive oil so that they shine a bit (use your hands).Bake potatoes at 425degrees until almost cooked. Cut each one in half and Carefully scoop out pulp, leaving shells intact.

Chop Broccoli florets into smalllll pieces (it breaks up naturally usually. Peel and chop stem of broccoli into small pieces. Chop up ham. Mash pulp. Stir in broccoli and next 6 ingredients. Spoon into shells, and place on a baking sheet.

Bake, covered, at 400° for 30 minutes.
