Buttery Carrots

Serves 4

Ingredients

1.6 tbsp butter
1 lb carrots
1 tbsp honey
1.6 tbsp Margarine

Directions

*prepare lactose-free version with margarine instead of butter.

1. Cook carrots in a large pot of boiling water until tender. Drain off most of the liquid, leaving bottom of pan covered with water. Set the carrots aside and season with salt.

2. Stir butter and honey into the little bit of water. Simmer and stir until the margarine melts. Return carrots to the pot, and toss to coat. Turn off stove Cover, and let sit for a few minutes to allow flavors to mingle.
