Chicken Florentine

Serves 4

Ingredients

4 unit chicken breasts
0.88 lb crushed tomatoes
1 tsp olive oil
1 tsp oregano
2 tbsp parmesan cheese
0.63 lb spinach

Directions

1. In a large skillet over medium-high heat, heat the oil and cook chicken until lightly browned on each side, approximately 6 minutes.

2. Reduce heat to medium and stir in tomatoes, oregano and basil; place spinach on top of the chicken and cover tightly.

3. Simmer, stirring occasionally, until chicken is cooked through, approximately 15 more minutes. Stir in salt and pepper to taste and top with cheese.
