Chicken w/ Spinach and Mushrooms (Jack)

Serves 4

Ingredients

1 unit bell peppers
1.25 lb chicken breasts
0.5 cup cooking wine
2 clove garlic
0.75 lb mushrooms
2 tbsp olive oil
1 unit onions
0.44 lb spinach

Directions

Take the chicken breasts, quarter them and then fillet lengthwise (think hamburger bun and not hot dog bun). Season the chicken *well* with garlic powder, pepper, salt. Heat oil in a large skillet over medium/high heat.

Cook the chicken until browned and cooked through, 5 to 7 minutes per side. Transfer to a plate/tray.

Dice the mushrooms, onion, and pepper while mincing the garlic. Return the skillet to medium-high heat and heat more oil. Add the peppers, onion, and mushrooms, tossing until the vegetables until kind of soft. Add the minced garlic and wine and cook until the mushrooms are tender and the wine is nearly evaporated. Toss in the spinach and cook until visibly wilted. The spinach will *greatly* reduce in size as it wilts so do not be alarmed if you have to add the spinach in waves. Serve with the chicken.
