Chicken with Roasted Grapes and Shallots

Serves 4

Ingredients

1 lb chicken breasts
1 lb Grapes
2 tbsp olive oil
0.63 lb Shallots
1 tbsp thyme

Directions

Preheat oven to 400°F.

Pull grapes from their stems and roughly chop the shallots (mini onions) into sizeable chunks. Saute grapes and shallots on the stove. Brown chicken on the stove. Chop the thyme. Gently toss grapes, shallots, thyme, and half the olive oil in large bowl to coat. Rub chicken with remaining half of the olive oil; rub both sides with salt, black pepper, and thyme. Place chicken in large roasting pan; arrange grape mixture around and on top of chicken. Bake for 15 minutes together :D

Let rest for 10 minutes.
