Cornflake Crusted Banana Stuffed French Toast

Ingredients

4 slice(s) Bread, Cinnamon Raisin
2 egg(s) eggs
1 unit bananas
0.5 tsp cinnamon
1 cup Corn Flakes
1 tbsp sliced almonds
0.5 tsp vanilla extract

Directions

Heat frying pan over medium-high heat and add a small amount of butter. Crush the cornflakes and combine the crumbs with almonds in a bowl. Combine eggs, vanilla extract and cinnamon in another bowl and whisk.

Dip 1 slice bread in egg batter, then coat on both sides with cornflake crust; repeat with remaining bread slices.

Coarsely mash the bananas and spread on 1 side of half of the slices; top with the remaining half of the slices to make banana "sandwiches". Cook sandwiches on the frying pan until golden brown. Cut in half in triangles and serve.
