Fiesta Bean Salad

Serves 4

Ingredients

1 unit avocado - ignore since they won't be ripe and this is the last week
0.94 lb Black beans - low sodium
1 cup Cherry tomatoes
1 cup chick peas
0.25 cup cilantro
2 clove garlic
3 tbsp lime juice
1 tbsp olive oil
0.25 cup red onion
0.5 tsp salt

Directions

1. In a large bowl, combine the garlic, lime juice, oil, cumin, crushed red pepper, and salt.

2. Add the black beans, chickpeas, tomato, onion and (cilantro)**; mix well. When ready to eat, gently mix in avocado and serve right away.

**maybe keep cilantro on the side to appease the cilantro haters
